Stir-Fried Pork Ribs with Pineapple
Ingredients:
500g pork ribs
1/2 pineapple
1 shallot, 2 cloves of garlic
1/2 red bell pepper (optional)
1 tbsp fish sauce
1 tbsp sugar
1 tbsp oyster sauce
1 tsp MSG
1/2 tsp black pepper
Green onions, cilantro
Instructions:
1. Prepare the ingredients:
Wash and cut the pork ribs into bite-sized pieces. Blanch them in boiling water with a bit of salt to remove impurities, then rinse with cold water and drain.
Peel and remove the eyes from the pineapple, then cut it into slices.
Finely chop the shallot and garlic. Slice the bell pepper (if using).
Chop the green onions.
2. Marinate the ribs:
Mix the ribs with 1/2 tbsp fish sauce, 1/2 tbsp oyster sauce, 1/2 tsp black pepper, and 1/2 tsp MSG. Let them marinate for 15-20 minutes.
3. Stir-fry the ribs:
Heat oil in a pan, add the shallot and garlic, and sauté until fragrant.
Add the ribs and stir-fry until they turn slightly golden.
Pour in enough water to cover the ribs, reduce the heat, cover, and simmer for 15-20 minutes until the ribs are tender.
4. Cook with pineapple:
When the liquid is nearly reduced, add the pineapple and bell pepper. Stir in 1/2 tbsp fish sauce and 1 tbsp sugar.
Stir-fry for another 5 minutes until the pineapple absorbs the flavors and the sauce thickens.
Adjust seasoning to taste and turn off the heat.
5. Serve:
Sprinkle with green onions, cilantro, and a bit of black pepper. Serve hot with steamed rice.
