Vegetable fermenting should be part the mainstay of any good diet. People have been fermenting vegetables for thousands of years in virtually every civilisation. Fermented vegetables produce good bacteria called probiotics for your digestive system to help your digestion and immune system work well.

Fermenting vegetables is something so simple and easy that anyone can do it at home without any complicated equipment. It is kitchen sink food preparation with no cooking. When you ferment vegetables, they remain raw so they have all the goodness preserved.

The good bacteria are what is called LABs: Lactic Acid Bacteria. They line your intestines and fight off the bad bacteria that can overwhelm your digestive system and make you ill. Fermenting gives you lots of these good bacteria daily.

You can ferment any vegetable that you are able to eat raw, including sweet potato, yam, broccoli, cauliflower, carrots, beetroot, onion, cabbage and more. This helps you preserve the vegetable so you can use up your vegetables instead of letting them rot and having to throw them away. You might have bought some great bargains at your organic market or you had a crop of your own vegetables that is too much to eat in a few days while they are fresh, so you can ferment them.

One of the great things you can also do is ferment vegetables in the jar and give them away as presents or swap with your friends for some produce they may have created.

Fermenting is also about connecting and reconnecting with food and being mindful about what you eat. If you are not paying attention to your food then your food will not pay attention to you.
